Zucchini Yeast Bread

This is from one of Andrew's co-workers. It's really good.



1 T yeast
1/2 cup warm water (70-80 degrees)
1/2 warm milk
1/3 sugar
3 T butter, softened
3 T orange peel
1/2 t salt
1 1/2 cups shredded zucchini
1/2 cup raisins
1 1/2 cups whole wheat flour
2 t cardamom spice
1 2/3-2 1/3 cups white flour

Dissolve yeast in water. Beat in milk, sugar, butter, orange peel, and salt. Beat in zucchini, raisons, cardamom, wheat flour, and enough white flour of make a soft dough. Knead 6-8 minutes. Place in greased bowl, turning once to coat. Cover and let rise 45 minutes or until doubled in size. Punch down and form into loaf. Place in loaf pan. Let rise again about 30 minutes. Bake at 350 degrees for 45 minutes or until golden.

I left out the orange peel. Cardamom is EXPENSIVE. Like $12 for a small bottle. I used cinnamon in it. It's good that way, but Andrew requested that I leave it out the next time. That test is scheduled for tomorrow. Believe it or not, Sheila (the one who passed this recipe on) uses this bread for tuna sandwiches. I can't quite imaging tuna and raisins!!
