Fruit Salsa & Cinnamon Chips

Chips

8 flour tortillas
2-4 T sugar
1/4-1/2 t cinnamon
cooking spray, butter, coconut oil

Mix sugar and cinnamon. Spray or brush tortillas with oil. Sprinkle with sugar. cut into wedges. Place in single layer on ungreased baking sheet. Bake at 400 degrees for 8-10 minutes, or until lightly browned. Cool on wire rack.

Salsa

15 oz peaches, chopped (drained, if canned)
2 kiwi, peeled and chopped
1 c sliced strawberries
2 t lime juice (lemon, in a pinch)
1 t sugar
1 t grated lime peel, opt.

Combine salsa ingredients. Serve with chips. (Mr B. likes it on ice cream too!)
Makes 2 1/4 cups salsa, & around 32 chips

Mmmmm!! I made this recently and it was soooo good!!! Alex, on the other hand... he said he liked it, but wouldn't eat it after the first day. And then we got sick, so a couple of days ago we finally dumped our alcoholic leftovers in the compost pile :P. Maybe next time I'll make it if we have company or something so I don't have to eat it ALL!!

Maybe he takes after his dad and prefers it on ice cream- yum! Eating a whole batch- yuck! It seems... a bit much.
I wonder if the alcoholic leftovers could be used in an Amish fruit cake type recipe? You have to brew fruity stuff for that anyway.
