Zucchini is overly abundant around here, so I am forced to get creative. Here is Jean Grandma's zuchinni recipe. I doubt that Grandpa ever ate it unless she didn't tell him what it was (which she probably didn't!!)
1/2 cup butter (or margarine)
1 1/2 cup sugar
3 eggs
1/2 cup oil
3 t vanilla
1 3/4 cup flour
1/4 cup cocoa
2 t soda
1 t baking powder
1/2 cinnamon
2 cups shredded zucchini
1 cup walnuts
1/2 cup chocolate chips
Cream butter and sugar. Add eggs, 1 at a time. Beat in oil and vanilla. Combine dry ingredients; add gradually. Fold in zucchini and walnuts. Spread in greased 9 x 13 pan. Sprinkle with chocolate chips. Bake at 350 degrees for 30-45 minutes.
I don't usually use the walnuts. Today I tried it without the cinnamon. We'll see how we like that.
