I wanted to make 7-up jello and searched on allrecipes for it. Couldn't find it!!! So I tried lemon-lime soda jello and everything else I could think of. I KNEW there had to be a recipe on there somewhere!! Finally I did an ingredient search and... ta-da! Its actually called, "Lemon-Lime Soda Gelatin Salad". Humph. Well, its new name is: Strawberry Cheesecake Congealed Salad. Haha... Ok, how about Strawberry Cheesecake Jello? Anyways, what happened is that I had several boxes of strawberry jello and no lime. So, rather than buy jello AND pop at the store, I decided to just get strawberry soda and make a strawberry version of it! Aren't I a genius? Ok... you can be honest and tell me you guys all had thought of and made it years ago. Anyways, it made me feel smart, and it turned out DELICIOUS also!!!!!
Red 7-up Jello
1 (3-oz) pkg strawberry flavored gelatin
1 tsp white sugar
1 cup boiling water
1 (8oz) pkg cream cheese
1 (8oz) can crushed pineapple, with juice
1 tsp vanilla extract
1 cup strawberry flavored carbonated beverage
1/2 cup chopped pecans (if desired)
In a large bowl, dissolve the gelatin and sugar in the boiling water. Add the cream cheese and whisk until melted into small chunks. Add pineapple with juice, soda, and nuts (if desired) and stir until evenly combined. Chill until set.
Mom, does your recipe use 2 boxes of jello? I only remember using one pkg of cream cheese, but your recipe makes a bigger batch! Anyways... maybe this is the extra-super-fattening version :). Hope y'all enjoy!!!

Good story! I gotta say...if you're going to call this "congealed salad", I can't eat any. Something about that word TURNS MY STOMACH! GA-ROSS!! But since you seem to have settled on "jello", I am going to make this. : ) I wonder if it counts if I change the flavors again to use up this pineapple pop (ha ha, no southerner here!) that's been sitting open on my counter for ummm, a little while now?
I think I'll dig out Mom's original recipe too for comparison. I too remember 2 boxes!
