"Bean Dip Soup" / Frijole Cheese Soup

AKA you-know-what soup. I'm not sure if that should be spoken of on a recipe blog. Mom always seemed fairly sure it shouldn't be talked about at the table. And yet we all loved this soup. Even the non-bean-soup crowd. I think. Correct me if I'm wrong, but you have to try it first to make sure you remember right. And the appearance of this soup is
so undeniably reminiscent
of ... such things, that Mom didn't actually outlaw the family name. She even used it herself. Some things you cannot fight. A wise mom knows this. : )

So we had a soup lunch today. James is home, so we naturally served 3 kinds of soup and muffins. : )
OK, that sounds bigger than it was! I served a little left over broccoli cheese, heated up the "Thai Spicy Mushroom" that Dan from church supplies us with (from work), and made
this out of yet more leftovers.

Remember this?

2 c pinto beans
14 oz can chopped/diced tomatoes
5 c water
1/2 c chopped onion
1 1/2 t salt
2 t chili powder
1/2 t cumin
1/2 t oregano (I might be temped to leave this out, but since it's in the recipe I figure it makes it OK to substitute leftover spaghetti sauce for the tomatoes and have both covered.)
1-2 c water
1 1/2 c shredded cheese

Soak beans, discard soaking water, cook in 5 c water with onion 1 1/2 hours. Puree beans with liquid in blender in batches or with stick blender you got brand new at a garage sale for $2, in pot. Return to pot (if necessary) and add seasonings, tomatoes, and 1 c water. Cover and simmer 20 minutes. Add cheese, stir, serve promptly.

Recipe Modernized:

This soup can be made in a few minutes if your beans are precooked/from a can. Onion powder can be used instead of the onions so raw hunks of onion aren't an issue. Pre-blend your beans and tomatoes if you refuse to use/don't have leftover spaghetti sauce, dump everything into the pot, stir, heat, add cheese if you haven't already (I would wait until everything else is warmed), and dig in.



P.S. My own pure minded children just call this "bean dip soup". We have not had to deal with yucky talk at the table yet. Haha! Not that particular yucky talk, I should say!

P.P.S. If you are not an original Harry, have no imagination, and are utterly befuddled, we called this "Diarrhea Soup" in days of long ago. I did not tell you this. You did not read that here. Thank you.

HAHAHA Becky!!!! I have zero memory of that soup, but the er... less formal name sounds familiar. Hmmmm. We might have to try this! (despite our dislike of bean soup in general) How long do you soak the beans?

Really!!??!! I would have thought you would have remembered it! Mom confirmed my belief that we all liked this stuff- as far as we remember. Maybe Andrew and Rachel have never had this? I am sure the rest of us did. It's terrible the way you loose old recipes! The good ones, that is. I do not pine for the days of ratatouille. : )
Anyway, I personally used precooked beans. Soaking procedures vary from soaking for 12-24 hours on your counter-top, to speed "soaking" by rinsing and then bringing beans to a boil and then simmering for 1-2 hours (?) before draining (or not) and cooking for once and for all. Oh boy. I think I just made a very simple process sound complex. Um, the easiest method involves just calling the nearest mom and saying "Mom, how do I...".

I have never made this soup but I have had the recipe for eleven years. It was in the packet of family recipes that Becky put together for the bridal shower from your church. Guess I will have to give it a try :)
