Reuben soup

1/2 Cup chopped onion
1/2 cup sliced celery
2 TBSP butter or margarine
1 Cup chicken broth
1/2 tsp baking soda
2 TBSP cornstarch
2 TBSP cold water
3/4 Cup sauerkraut, rinsed and drained
2 Cups half and half cream
2 Cups chopped cooked corned beef
1 Cup shredded swiss cheese
salt and pepper to taste
Rye croutons, optional

In a Large saucepan , saute the onion and celery in butter until tender. Add broth and baking soda. Combine cornstarch and water, add to pan. Bring to a boil; boil for 2 minutes, stirring occasionally. Reduce heat. Add sauerkraut, cream and corned beef; simmer and stir for 15 minutes. Add cheese, heat until melted. Add salt and pepper. Garnish with croutons if desired

***I recommend that in place of the fresh deli style corned beef you use the canned corned beef. It was much better this way!***

Oops! I made this a week or two ago and keep forgetting to pop back on here and say:

This soup is amazingly delicious!!! I loved it, Alex liked it, and Titus wouldn't touch it. You have to pardon the guys though... Titus is going through a picky phase, and Alex doesn't get quite as obsessed with Reubens as I do. He likes them... I just get a little carried away with my enthusiasm sometimes :D. Anyways, it was DELISH!!! Thankyou Sara!!
