The Best Banana Bread!

Janet's Rich Banana Bread (from allrecipes.com)
1/2 cup butter, melted
1 cup white sugar
2 eggs
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup sour cream
1/2 cup chopped walnuts
2 medium bananas, sliced

Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan.

In a large bowl, stir together the melted butter and sugar. Add teh eggs and vanilla. Mixx well. Combine the flour, baking soda and salt, stir into th ebutter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.

Bake at 350 degrees F for 60 minutes, or until it passes the toothpick test. Cool in pan for 10 minutes before removing to a wire rack to cool completely.

This makes the BEST banana bread!! I usually just mix the bananas in with the butter ingredients and mash them in there good instead of slicing them, I also have mashed one and sliced one... doesn't make a big difference to me! So I do it the easy way! :) Anyways, just recently I have decided my favorite way to eat these is in mini-muffin form!!! I made some for that diaper party before our last trip to MI and boy were they delish! If you want to try it, I think I baked them at 350 for about 12 minutes. I check it after 10 and that's why I'm not absolutely positive how long they baked ;). I just know it is longer than 10 and shorter than 15! Heh heh, last night I baked some for 15 and they didn't BURN, but they were definitely dark :P. Anyways, I hope y'all enjoy these!!
