Jalanepo Pepper Poppers!

Rachel and I spent quite a bit of time working on making these for Andrew's graduation open house. We altered the recipe a little to make our job a little simpler. I must say though, that our alternate recipe came out quite deregulous!

8oz. cream cheese
8oz. mild shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon chili powder
1 pound jalapenos halved and seeded
1/2 cup bread crumbs
Mix cheeses and seasonings, fill the pepper halves and roll in the bread crumbs. Bake at 300.
20 minutes for hot, 30 for medium, 40 for mild.

Sara sampled one of the mediums and said it wasn't very medium. So if you like the spice "less is more!" One of the alterations that we made was that we did not put any bacon in them the official recipe (Taste of Home) calls for bacon, but we didn't want to take the extra time for that due to the large quantities that we have to make. We tripled the recipe, and we're planning on getting another 5 pounds or so of peppers and doing some more! Other than these I haven't been doing that much cooking due to certain circumstances (like the oven element burning out!). Maybe now that its fixed though... We'll have to make Rachel do some posting on here since she's the one that does the most baking in our house.

Very tasty Anna! I finished off the last 10 or so of my batch of peppers today, your way. Yum!!! James thought they were hotter than our recipe, but the ones I had were cooler. Whatever. Either way, they are GOOD!

Those of you who didn't get to Andrew's open house need to make these. The girls baked these all up, froze them, and then bagged them and threw them back in the freezer. They just reheated them in the oven as needed for the party.
So, go thou and do likewise, and you have cheap convenience food!
I did it too, and we love having poppers in just a few minutes with none of the nasty pepper gutting or long baking time.
Our family gives them 10 stars. GOOD JOB, GIRLS!

I made these for the family here last Friday and they were a big hit! They had never had them before, but I think out of all the recipes I've introduced them to, this one was the most popular. If you haven't had them in a while, you should refresh your memory as to how delish they are!
