I wanted to make sure the rediculous amount of garlic I purchased last time we were sick did not go to waste while we were on vacation. So I posted a request on facebook for ideas of how to use a LOT of garlic. Here is one of the results:
Garlic Pizza
1 batch of Becky's Best Bread
Garlic Pizza1 cup milk
2 Tbs butter
2 Tbs flour
salt, to taste
1/4 tsp cayenne pepper
3-4 heads (not cloves! Yeah, this is good stuff!) of roasted garlic
mozzarella cheese
parmesan cheese (optional)
OK! So first you'll want to roast the garlic by cutting off the tops (about the top quarter. And the heads kinda fell apart for me when I did that. But I tried to keep them sort of together because...) and rub some olive oil (about 1tsp per head) into the top of the newly trimmed head. Then sprinkle with salt and pepper (I don't know if this part really matters or not!) and place cut side down in a baking dish. Bake at 350 until cloves are soft and golden (about an hour). After it cools, you can pinch the individual cloves out of their peels without any trouble!
That's the hard part. Next, just make a white sauce by melting the butter in a saucepan. Add flour and cook a couple minutes. Gradually add in milk stirring constantly to prevent the formation of lumps. Keep cooking and stirring constantly until it boils and thickens. Remove from heat and add 10(ish) of the roasted garlic cloves. Pop into a blender or use a stick blender and blend those puppies in. Let it cool somewhat and spread on your already smooshed-out pizza crust. Top with the rest of the roasted garlic cloves (I chopped the bigger ones up a little) and add cheese. Due to the white crust with white sauce on it along with white garlic cloves, I had trouble seeing how much cheese I was putting on, I guess. I put a LOT on. And boy was that pizza ever GOOD!!!! Haha. So feel free to use as much cheese as you desire. I also sprinkled on just a smidgen of parmesan because it sounded good with the garlic :).

Mmmmmm. Try not to eat it all in one sitting! :D Oh yeah, Titus wasn't too crazy about the cloves of garlic, so I guess that's maybe not such a great kid pizza. Hope y'all like it!
P.S. This was adapted from this recipe at Food Network.
