Chicken Corn Chowder

Greetings, my long-lost fellow cooks! I had a few family requests for this recipe and decided to do something really radical and post it!!! Hopefully, everyone still gets an email notification when something is posted on here!

1/2 c. Butter
1 Diced Carrot
1 Diced Celery Stalk
1 Diced Onion
1 Minced Garlic Clove
1/2 c. Flour
2 Cans Corn
1 Can Creamed Corn
4 Diced Potatoes
2c. Cooked Cubed Chicken
4c. Chicken Stock
2 1/2c. Milk
Salt & Pepper to taste

1. Melt butter in a large soup pot. Cook carrot, onion, celery and garlic until softened. Stir in flour and cook until lightly browned. Allow to cool 10-15 minutes.
2. Stir in 1 cup chicken stock until thoroughly combined. Add remaining stock, corns, potatoes, and chicken. Bring to a simmer stirring constantly until thickened, about 5 minutes.
3. Stir milk, salt and pepper into chowder. Bring to a boil, reduce heat to low, and simmer until potatoes are tender.

Dairy Free (which is how I made it): Country Crock olive oil butter, and cashew milk.
